Go with the left handed reel. I myself cast left and reel right, just backwards to you. No lost motion of switching hands.
All you youngsters step aside, in less than three months, I hit ninety, still fishing and driving. But yak is not for me, I too fish standing. Keep on moving!

But sorry, I'm was not into the steel or bamboo rods, so I'm not the person to ask.
I quit fishing in 1944, and didn't pick it up again until 1970. I used a solid metal reel in the 1930 and 40's, never saw a Mitchell 301. Didn't even know there was one for lefties until you mentioned it!
Such is life.
Only problem with the Mitchell 300 was they didn't work well when used by lefties.I cast left and reel right.
I went through a few knives by the time I was 23. Then my new father in law gave me a Case XX and said, "if you can sharpen this kbife, its yours," this was in 1953, and I still have that knife. I have a few more now, but an American made Case would be a good choice.
This falling bait is a bit complicated. When I use my bait caster I lift the rod up when the bait hits the water, that gives me enough line for the bait to reach the bottom. As for the speed of the fall, it depends on what you are want to have the bait do. Slow is good unless you are fishing areas full of small bluegills that eat your bait before it reaches it's intended spot.

I find fishing where the fish are an important part of trying to be "good." You can fish all day in an area without fish, so learn some tricks about where to look, what makes the place look fishy to the fish.

I have always been told Kast King reels are junk. So I never bought any of their stuff. However, for about $100 one can get an Abu Garcia veritos rod or BassPro carbonlite, both very light and strong, and for another $150 you can have an excellent reel to finish out the set. This set if properly maintained should last until he is grown. Try to resist the urge to buy cheap, they don't last.
