Question for you all, do you soak the wood chips? I have been but recently read you don't have to.
All the fruit and nut woods work well. My favorite is Curl Leaf Mt Mahogany. It's hard to find but imparts a uniquely rich flavor particularly on salmon and pork. I've been using it for 40 years and never been disappointed. I never soak but I use chunks not chips. Good luck with your smoking project!
