I will 2nd that on the Pike and Muskie but the Walleye and perch are neck and neck for eating, with the Northern Pike not far behind.
Love fishing for LM bass, but I think I would give it up to catch Peacock Bass.

As far as fishin goes, I love to catch any fish, so whatever is on the bite is what I would like to fish for.
HOWEVER, the question was, what fish would you fish for if you could only fish for 1 type of fish.
That bein said, I would have to go with Stripers, hands down. The opportunity is there to catch a huge fish and even the LITTLE ones fight harder than most any other fish. Even SM. And I love to catch SM. Plus, Stripers are GREAT table fare.

I agree with Ricky,and if I had to pick just one species of salmon it would be Coho first followed by Sockeye
Mine is yellowfin tuna. Great fighters and good eating!
I think I would choose a freshwater species such as bass, or maybe panfish crappie or perch. For the reason that they are present and in season constantly. I love striped bass but there are closed seasons and migration patterns that prevent you from catching them. Fluke ( summer flounder ) fishing is great fun and good to eat as well but again the season is short and they are migratory. It’s tough to focus on only one species.

👍 I agree Kerry. Steelhead are spectacular fighters and jumpers. The difficulty in finding them, hooking them and landing them is my #1 passion. Next for me would be Salmon of all species. Kokanee are one of my favorites for eating.

Bass to catch and Sheepshead to eat !
Hardly any mention of Steelhead and Salmon. They are my favorites here in No. Calif. and So. Oregon!
