If your a fly angler Argentina is outstanding , offshore Costa Rica or Panama well worth the trip !
Timing is also a part of equation . I’ve never fished New Zealand but that’s great as well they tell me .
Species sought is also a consideration , contact some booking agents they can give you ideas that are best for your timing !
Covid may still be in play and prevent access in many countries !
You didn’t say from boat or shore ? If boat then soft bottom seems to hold more fish .
Also a chum u key helps greatly to draw in the fish .
Mussels are great bait as are clams n worms ! I’ve done just as well with mussels over a chum bucket !
If shore then areas of that offer mud bottom that u can reach are generally better !
I would use worms with a 2 hook tandem rig ! It’s a little tougher to locate decent areas from shore but ask at local tackle shops they can point u in right direction and suggest best rigs n bait !
Freshwater double uni knot works fine! Very quick and easy to tie ! Salt I prefer to use reverse Albright correct really big fish HC spliced to a leader !
Uni knot more then enough for your use !

Streamers are very appropriate for trout in specific rivers and lakes ! They are big trout producers especially in rivers that display heavy flows ! Coupled to a Teeny line and fished correctly they are big trout candy!
If your standup in cockpit boat 6’6” stand up rod 50-80 !
Reel 50 Wide loaded with 100# HC spiced into 200 # fluoro or mono leader .
Would be my choice , you’ll need good stand up gear kidney , chest & belt harness
These fish very greatly in size and fighting capabilities do you have to prepare for the worst !
That’s correct bunks best overall especially for heavier boats . I’ve had boats that weighed over 5000 Lbs on float on trailers with bunks ! Drive on drive off one man operation ! No winches a pleasure !
Lighter boats those under 2000 lbs rollers are fine ! Heavier larger boats float on or drive Ons get my vote !
I’ve owned 12-26’ OB and always used a float on bunk trailer because this trailer allowed me to launch n load by myself !
No winches
drive on drive off ! Simple !

How strong is that knot, have you ever had a problem with it slipping
Palomar is a class A knot , however it must be tied correctly , that is the double line on hook must lay side by side, never crossed !
I’ve taken may species with this connection including giant tuna with 300# leader !
We generally crimp big game leaders but this knot will hold up fine .
I usually add a shot of glue to big game leaders , use a glue that is heavier in application so it fills knot gaps and smooths out mono !
Maui ! Lear lenses & very lightweight
Tan lenses brighten up the bottom nicely !
I have several pairs ocean dark , streams tan ,& yellow in snow fog etc !
