I fished carp as a kid and always ate them. Large flaky meat with mild taste. Just gutted em and stuffed with onions wrapped in foil and threw them in the grill. I have heard if caught in muddy water they taste like dirt. Some people put them live in a barrel with fresh water for a day and then kill and eat.
I was told by a Russian(a LOT of them)that will get rid of the mud vein.Biggest one yet 30 Pounds,I really like the fight they give.
