They molt like crab. Watching and checking on them before they become paper shells, which are too hard to eat, is why they are more expensive. The first time I had them was about 20 years ago at the Jazz Fest in New Orleans. I had to check out what the long line of folks was for. I’m glad I did.

Soft shell crab and soft shell crawfish poboys are my two favorite fried seafoods. French bread with pickles, tomatoes, lettuce with mustard and mayo. You can’t beat it.

From the pictures it looks like you scaled the drum. If you haven’t already tried it, filet it to the backbone, leave the skin and scales on and cook it scales down. No need to turn it over and baste it as needed. Cooks faster on the “half shell”. When you go to eat it, the skin and scales stay on the serving pan. I make either a butter or olive oil concoction with similar ingredients to you plus lemon juice. 👍
