My pa was from Alabama so we always had peppers and okra growing in our garden and I grew up eating that stuff. He taught me. It's pretty easy really if you pay attention and don't get too drunk. I found an asian market here that sells fresh whole shrimp (those are hard to find if you're not on the gulf coast) and I shell em and throw the heads and shells into a pot to make bullion. Use that for my liquid. I also found an easy way to make a roux. Equal parts oil and flour give it a stir over heat on the stove, throw it in the oven at 350 and let it cook - you don't have to stir it constantly just every 15 minutes or so til it gets to the color you want it. I like a deep chocolate brown. You can make it ahead and store it in the fridge too. Man I'm gettin hungry.

I saw that trick with the roux on Good Eats on the Food Network. Alton Brown. It works.

With all this talk about gumbo, I think we need to have another party. GUMBO PARTY at Spirit's house. We all had fun at the last party , thanks Gordon. However, some of us might still be a little hung over, maybe we better wait a little longer before our next party.

Y'all come on over. My gumbo is a hangover killer. I usually do chicken, shrimp and andouille. Anybody want anything more exotic than that?
