I think that is not a golden trout but rather a hatchery produced albino rainbow trout. Common now where there is a lot of stocking.
True golden trout live in remote areas out west.

If you grow up casting lures for bass with spin gear in the USA, and you are right handed, its much easier to learn to reel with your left hand, so your good right hand is always on the rod, as I do now using both spin or fly gear.
Never really got into baitcasters.
But here in NZ, most fly or spin guys, cast with their right hand , but then change hands so they can reel with the right hand also. I love to kid them about it, saying they wouldn’t make good muslims!

I find that kayaks are uncomfortable to fish from, no good back support, tippy, expensive, and heavy.
You would be far better off buying one of two watercraft.
I love pontoon boats. Easy to carry in almost any vehicle, very comfortable to fish from, and fairly cheap. Unless its freezing weather, i just wear high neoprene socks with my fins. Great to maneuver on lakes around weed etc.
Second choice would be the Westmarine 10
Foot Water Tender, $600 , rows well, can add small electric or gas motor. Might need a trailer, unless you can lift 50
Lbs onto a roof rack.

I had a ball there in the canyon, in one day, catching more nice browns than I could count!
I used a # 12 black tungsten bead head nymph
I tied myself, hares fur collar, black rear part with fine red wire ribbing, brown pheasant tail . I hung this 6 feet under a white indicator made from glo bug yarn soaked in silicone, and nymphed the deeper faster water! Too easy! Great fun!

Never seen a Martin fly rod, but I remember Martin fly reels from way back!
Sounds like you got a bargain. If it does the job, you have done well. It all depends on what type and size fish, and what demands that puts on the gear.

I mostly fly fish, but an amazing lure I discovered a few years ago for trout is the Niti lure, made by Amish folk in Penn.
Google it! You need to buy direct from
Them.

1979 was a long time ago. Since then I spent 40 years guiding and fly fishing in New Zealand. Learned a few tricks i wish I had known about in Tassie back then.
I tried hard to catch the big rainbows and browns in the weedy highland lakes or lagoons as they call them. So you might try our very popular NZ nymph for this type of still water fly fishing. We tie a type of pheasant tail nymph, size 14 and 12. Its a skinny thing, using red dyed pheasant tail for the tail and half back, and a body made entirely from fine red wire. See the photo, red nymphs are top
Left! I use a small indicator of white siliconed yarn, out on about 4 to 6 feet of mono, and then another length of 8 lb flourocarbon to the nymph, sometimes only a foot or two deep, sometimes much deeper depending on the lake. Fish pockets in the weed where you see rises.
It looks like a damselfly nymph sort of, but the trout love it!
From what I have read recently about Tassie, a guide may be the best option, especially for rivers.

I like the idea, but can no longer live up to the dream. I’m 75 now, and alcohol
No longer agrees with me. Lately I fake it by ordering Heineken 00! But I have been a fly fishing since 10 years old, and a guide for about 40 plus years, so I hope I don’t lose my credibility by not drinking alcohol! And I feel a lot better than I ever did when I did drink! Cast better too!

I went there long ago, 1979. I found the fishing difficult, but the high point was hiking up to a lake called Clarence Lagoon! It holds only Brook Trout. I caught many around 12 to 14 inches, and one about 20 inches. The big ones eat frogs! Bring a frog fly!
Next year we moved to New Zealand. Never looked back. The Lake Taupo wild trout fishery is phenomenal. I highly recommend the Tongariro river, and trophy trout lake Otamangakau in and near the town of Turangi. I live there now, back again in mid October!

If it was a good 4 piece rod, a 5 wt for salmon would be ok, but most of those pack rods break easily.
It all depends on how you fight the fish. Its not the rod that beats the big ones, but rather how long you can keep them hooked with a bit of drag, eventually they give up. Keep the rod low, almost pointed at the fish, and use the drag to tire them fast.
