Welcome Gary511, I live just south of Houma and fish the marsh area just north of Cocodrie. The cold weather has lowered water levels enough to have fish in the main canals and bayous. If you know the marsh area and find a deep hole, you’ll catch more red fish than you need. If the weather is cold, fish slow and deep for specs. Good Luck and welcome to Bayou Country,
Just want say thanks for everyone’s concerns. Its been a while since I’ve posted on the site but I still enjoy reading. I live in Houma, La. ZETA tracked just east of Houma putting us in the north west quadrant of the storm. I have been thru many hurricanes but never one as this. Wednesday morning the sun was shining. It starts raining at 2:00 in the afternoon. From 4:00 till 6:00 75 mph winds with several 100 mph gust. At 6:45 the sun peeks thru the clouds at dusk. That was Mother Mature at her best. I had 6 1/2 inches of rain in a four hour period, which isn’t uncommon down hear. Other than a few tree limbs I had no damage, all is well. We still are without power...temperatures in the 50’s at night. Running on generator power.
I hope all is well with “four”. Lafourche Parish caught the worst of it. There’s lots of damage in his area.

Fly guy: You are welcomed to Houma anytime. Just bring your fishing lines. If you came for two weeks and fished South Louisiana you will not want leave.....I guarantee!!!

Able Man, Best I can do to answer your two Coonass questions is: keyaww is a response used when you hear something cool, neat or stupid as you mentioned. Couyon is a “dummy“. What part of Louisiana did you live. Those words are used mostly in south Louisiana.

Not a dumb question Gordon, maybe dumb on my instructions not to say remove Filets from the sauce pan and place directly on grill. JustRight is also right, thanks for clearing that up.
Nice fish and pic there Fredfish. Looking at them trees makes me wander if you’re fishing in one of the bayous in my part of the country. Lol

Not good at this but I’ll try Huntm22, Filet the red fish and leave the scales on both half’s and remove the bones from the rib area. Depending on thickness/size of filet, you may want to score it (as I did in the picture) to let the flavors get deeper into the meat. Many people have different recipes for grilling redfish and I’m sure they are all good, but my favorite is 2 cups of Zesty Italian dressing, 4 table spoons of Kikkoman soy sauce. Put filets in sauce pan, apply lemon pepper (or fresh squeezed lemon) and Tony Chachere’s Creole Seasoning. Pour about half of mixture to the fish and let set about 15 min. I cook mine on a gas grill at 350 - 400 degrees for about 20 minutes. Apply the rest of the dressing and more seasoning after 10 minutes on the grill. When cooked, the meat will separate from the skin when using a fork to eat. Cooking time for me is about 3 cold beers. 😎
