There aren’t many recipes that I have found that smoke at less than 200* some say that you don’t get much “smoke” benefit after 250*. Although, on my Green Mountain, I smoke/ grill at 350*-375*. My opinion!
Also I did make some homemade Canadian bacon and some dried beef that started at 165* but the temp was increased throughout the smoking process.
Mesquite is probably the strongest, most smokey but I will defer to the many “smokaholics” here on the stage.
The bride and I use apple and cherry most of the time no matter if it’s fish, chicken, pork, beef or lamb. There are lots of methods to the process, and lots of recipes on the web.

I certainly agree with the others! I have a electric smoker by Masterbuilt, and a pellet grill by Green Mountain.
The electric model is far and wide easier to use and takes the babysitting out of the equation. Mine uses wood chips and they are available in many flavors/ tastes. Cherry, apple, mesquite, hickory. Don’t get one with a glass door cuz the glass gets smoked up and you can’t see thru it anyway! Mine has a remote so I can monitor time and temp from indoors. Also has a meat probe to monitor internal temps because you smoke to an internal temp rather how much time. Easy peezy!

My daughters boyfriend and his 3 boys were part of this very lucky bunch! The Sheriff and his seemingly buddy barge owner hosed them $5 grand to recover their sleds and wheelers! Boyfriend had come back with an airboat and the sheriff wouldn’t allow them to fetch their own stuff had to wait 5 hours for the barge guy! Ice was 18” thick but the piece they were on broke off and drifted away from the shoreline! You can buy new stuff, lives are irreplaceable!

Yes sir! Freaked my daughters out this summer when I broke out the tequila bottle! Had to save the vodka for other beverages! We’ve also used gin.

Hey OJ! The only other place to get something close was the Pickle Factory in I believe Nelson, Wisc. Nice watering hole as we rode our motorcycles along the river, south on the Minn side and back on the Sconny side! Nice memories!
