I think injecting the night before. I use Jess Pryles Black seasoning.On the point of the brisket I trim off the bottom side so it gets a maximum amount of smoke. Then I put it in an aluminum pan raised above and add apple juice. Myron Mixon on hot and fast brisket does it better. I did not wrap the brisket this time and noticed there was more bark on the brisket. I hope this helps. 🦅🇺🇸🇺🇸🇺🇸🦅
