You can make your own with whatever ingredients you want to put in it. It is just spices sugar and salt. The wet brine from the store is a powder that you add to water, mix it up, and put the fish in it to marinate.

Alder is what is used most for salmon. You can dry brine or wet brine. I have tried them both. I have a buddy who uses the wet brine from the store and he cuts the heads and tails off the fish, he just guts them lets the fish brine for 24 hours, and smokes them for 24 in a little chief smoker. His smoked trout tasted like it was professionally done. It was moist and Smokey. He gives them away he doesn't eat them. My fish don't seem to turn out that well no matter how I smoke them and brine them. It may be that it is better because he doesn't flay them and leaves the skin on them. I have used honey and garlic powder and even BBQ sauce as a brine before.
