Your recipe got me to thinking. I believe I might have one package of ground Wild Boar meat left. I'll have to check. Anyway what would you recommend, other than the Horse Radish, to kick it up a notch?
I do know that Io have 2 lbs of ground goat meat. Demistic not wild.

I think I might use some Tony Chachere's Creole Seasoning and maybe a little cayenne pepper if you want.

Just got home and checked. Ground meat is 1 lb goat and 2 lbs lamb. Forget I had it until these postings.

Hmmm... Not a big fan of either of those meats.
Not sayin that the meatloaf wouldn't be any good, but I wouldn't go buy that meat to make one either.

I would still put sausage in the mix though. Maybe at least 1 pound of each.
We go 50/50. 1 pound hamburger, 1 pound of sausage.

Got these meats at a local food pantry. They also give out various organ meats that most people won't eat.

Not exactly wild game, but just made some Hamburger Helper with lamb meat.

Wow,
Just got 16 free recipes from the National Bison Assocation. I know where I can get ground Bison, but not sure where to get other cuts of meat?
There used to be a Bison farm in Bainbridge Indiana, but I'm not sure if it still exists. There was also a Elk farm near there. Does anyone know of a place in Central Indiana that sells all cuts of Bison or Elk meat?

Just looked it up. It appears there are two Elk farms near Roachdale Indiana, not far from Indy. And there is a Bison farm near Monticello Indiana. There is another one in Bloomington Indiana, but no self respecting Boilermaker would go there.
