Use the #10. Never seen the # 7. Also use crushed red pepper and black pepper.

I love Elk or Deer. No other meat added. Just a little salt and pepper and flour. fry in a little butter or olive oil for few minutes....never overcook. served with two over medium eggs.

The bs is red in middle. I like sausage as well but fresh I eat it everyday for a week or two after the hunt.

Haven't deer hunting into years do to my rebuild knee surgery on both my knees but can't wait till this year my bought 300 acres , last year in some prime hunting area up here.
Can't wait I'll have a key to the property.
Know each other for 30 plus years.
Grew up deer 🦌 hunting.

Nice. And delicious I’m sure. Always have some burger and breakfast sausage made from my wild game. But you got me beat by doing it yourself. Very nice for sure πŸ‘

I've always add some Bacon Grease to my mix before packing. I found it adds flavor and not as easy to over cook it. Man, now I'm hungry for some Venison and Elk !!!
