Got to grind my deer meat Friday. Made 44 lb,s of burger and 20 lb,s of sausage.
1st 20 lb batch ground
Mixing with the sausage spices
Stuffing in the bags. 1 1/2 lb,s in each bag
The black writing ones are the burgers. The red are sausage.

Love the tenderloins - we used to bring the venison out onto the ice with us & flash fryβm up on the Coleman stove with chopped onions and cheese for mini-venison sliders π.

What kinda seasoning for your sausage
I use Leggs #7 0r #10. I like them both. I use the same seasoning when I butcher and make hole hog sausage.

I wasn't able to hunt this year, but was able to get 60 lbs of ground venison that another hunter didn't pick up. I just pay the processing fees and get what's left.
I gave 30 lbs to my son and kept 30. At a New Year's Eve party made a huge meatloaf.
3 lbs sausage, 3 lbs ground beef and 3 lbs deer meat. It was the rave of the party.
Shortly after midnight I managed to get myself in trouble. I asked my daughter for a phone book. She said " Daddy get with the times. Nobody uses a phone book anymore. Here use my phone". So I did. I smacked a spider crawling up the wall.

Beautiful Gordon, my BIL and I just made some bologna and sausage this past weekend. Quite a coincidence, your stuffer however blows ours away, weβve got the old fashioned crank style.

I only get to sample venison when I go back to Virginia during the winter, I have not been back in a couple years. I like mine barbecued. Good stuff if cooked right.

My personal favorite is Deer tenderloin, burger and sausage, I pound my tenderloin with meat hammer and country steak and gravy just melts in your mouth. Out of all the venison I've eaten the best tasting I've ever had would be moose or even preferably caribou.
