A lot depends on the water they came out of. I've had LMBs that were really muddy or grassy tasting but the bass in the lake I've been fishing the last few years are outstanding. A guide I talk with says "that people only eat bass because they can't catch walleyes" Ha!

I grew up in the midwest, spend/spent a lot of time in Michigan & Great Lakes, and Canada, as well. There Seems to be a positive correlation of cold cleaner water, and tasty meat. At My cousins wedding in Michigan long ago, there was Walleye, Whitefish, & Yellow Perch...I had all three, and was surprised that the Yellow Perch was clearly my favorite, even with an ingrained bias against the notion of Yellow Perch being worthy..Lake Michigan Whitefish baked & planked on Cedar is absolutely amazing, and walleye are a gold standard of deliciousness...

I grew up in St Louis catching Primarily Cats, Largemouth & Panfish, in the Mississippi Missouri, and ponds and lakes, warm water almost always muddy. The only edible Catfish were Channels, and were not good, just edible...Flatheads & Blues were toxic...
Starting doing expeditions in northeastern Manitoba in 2012, Walleye, Northerns, and the oddity Channel Cats! on artificials (Was always taught and proven to me thats Cats & Carp would only bite Dead Bait & Stink Bait)
Moral of the Story: The Canadian Channels were a close second to the Walleye in tasty sweet flakey white meat, indicating environment is important as well as genetics

I grew up in Minnesota so I was spoiled on walleye. My dad took us to Leech Lake and I was hooked. There are times I have been called a walleye snob because I won't eat catfish, pike, bass or burbot.
As I got older I did try other fish and found them to be delicious if caught in the right season. Also how they are prepared.
I still primarily fish for walleye, pike and perch. Now I will try other fish crappie and sunfish.
