In Wisconsin the Door County fish boil( Google it) is the Midwest's version of the classic crab boil, featuring boiled whitefish, corn on the cob and potatoes in a large pot of salted water. The Door County fish boil is known far and wide as a dish, a destination, and an event.
Also adding fish and some frozen corn to packaged soup like the BEAR CREEK creamy potato or creamy wild rice is an easy to make outstanding fish chowder.

Hey KM, I have not used drawn butter but we do love it using shrimp cocktail sauce on it after boiling and chilling it.

The bullion base is generally cooked first then the redfish filets are placed in the pot and gently submerged. It doesnโt take long for them to cook so you want to keep an eye on it. They are boiled in the sauce on a low heat. Catfish can be substituted and is also good. I have also made etoufee with redfish or trout filets. Similar process but different ingredients. Itโs excellent.

Thanks for the information Four. When I was working in Lake Charles around 11 years ago I was invited to dinner by one of the gentleman I played music with. His wife served me the Redfish Courtbullion and I thought it was one of the most wonderful meals I ever had. She also served some very good bread to sop the last of it up. Everybody I was fortunate to meet while there were great people. Very down to earth ๐๐
Probably an old favorite recipe. I was watching an old "GUNSMOKE" series the other day and "Chester Good" was getting ready to boil some catfish he had caught. Of course DOC thought he was crazy for doing so.

Itโs a favorite, one of many, Cajun creole meals of mine. I would imagine she served a French baguette with the meal. Theyโre perfect for sopping gravies and rouxโs. Cโest bon.
I've tried several different species in boiled water. Real careful on not over cooking them. I've tried just salt, old bay, and shrimp boil mixes. Hot melted butter for dipping. Never had a "WOW" bite but really like the method.
Now that I have some fish in the freezer I think it's time to try again with the cocktail sauce. Tight lines

Hey M, Tim Allen cooked salmon in his dishwasher on Home Improvement years ago. I still laugh when I see reruns. Just remembering.

Nice Katman. A couple of us use to catfish all night. Always carried salt n pepper. Often did up the bigger gills. Back then an open fire was permitted along the MD side of the Potomac. The National Park service controls all the land along the C&O canal. No more fires camping only in designated area. Was talk of charging ramp fees awhile back ๐
