Best Eating fresh water fish.
I have lived in different parts of the country and luckily been able to feast on a variety of fish both salt and fresh. Black Sea Bass in really tasty without adding much of anything. Really a non-fishy taste and smell and very flaky. We were able to go to restaurants in San Diego and order black sea bass back then for a reasonable price. I have no idea what the cost is now. There was talk of protecting the species for a while.

A lot depends on how they are cooked. Lake (yellow) perch, walleye, channel catfish, bluegill, and crappie are great if prepared right. I have never fileted crappie or bluegill, when pan fried the bones are easily removed at the table.

Walleye, dipped in egg wash, then Panko seasoning, cooked in medium heat with butter and cooking oil. The spice, lemon pepper and a touch of salt. Cooked to a golden brown. Now that’s just plain heavenly. Bass, blue gill, crappie, Steelhead/Salmon are all good.

I agree with you. Last year I had a fish fry for 30 friends and family. I cooked catfish, crappie, perch, walleye, and pike. Every person tried and liked all the different types. They had their favorites but good fish cooked well is GOOD!! IMO

Back before I ever thought my dream of returning to my home lake of Table Rock would be realized, I fished strip pits and small lakes out of a Water Scamp. That kind of bassin has a close-to-nature feeling I actually miss now that the Scamp is gone. Scamp fishing is different in a good way. Back probably 10-12 years ago, I'd bring home a couple of fish to eat, but that all stopped and I forever became a catch n release guy. Wife came out whilst I was fileting on my custom-made filet station and said, in the girl's typical high voice "oh, his eyes are so pretty!" Ugh.
We love us some fried fish, particularly walleye or crappie, so I miss cooking it at home. I think, since we moved to the Rock, she's ready for some fresh fish, so if, and it's a big fat if, I can start catchin a few again, we'll munch out.
I'm in a pome-worthy dry spell.
My favorite, and now hers, way to cook fish, is different from most. My mama always used crushed saltines and egg wash for pan-fried filets. Cole slaw, fried taters and cornbread rounded out this perfect meal. Crap. Now I'm hungry AND I miss my mom.
So, in order of favorite fish to eat -
Walleye 1st. I always describe walleye meat as kind of between bass n crappie.
Crappie.
Bass.
Catfish.
Flounder. I know. Not freshwater. 🙄 So I found that I love flounder during a short stint in SW Florida.

Yo muddler, is rock bass the same as goggle eye?
#1 Brook Trout. Which are not trout at all, they are char, as are their big relatives the lake trout. All other fresh water fish run a distant second as far as table fair go.
Channel cats from a clean running river
Northern pike from cold, clean water
Yellow perch
Rainbow trout from a clear mountain stream
All of these fish are delicious prepared in various ways, but they (and most other, including carp) depend on the quality of the water they come from for optimum taste. Fish from fouled water will have an off-taste, no matter the fish. That's why brookies are always so good - they can't live in bad water, they'll die in it.

Hi Sinker Rig - I think Rock Bass are also called Goggle Eyes, Red Eyes, and other. Fun on a fly rod, seem to like a black wooley booger fly in early summer. Have you ever eaten them?
