Crappie is a very tasty little fish,… well sometimes they’re not so little … like when they become Slabs pushing 3/5 lbs…..
Anyways I’ve eaten them several different ways … the best for me was steamed Asian style…. the flavour is ver nice and the texture is so delicate… it’s the bomb..!
If you have never eaten fish this style,.. you’re surely missing out…

Lots of folks here in South Mississippi call them white perch, except for those who moved here from Louisiana. To them, of course, they are sacalait.

The ones called slabs are large Crappie because of their width.

because big ones are large and flat, and also called Barn Doors for bidg ones

Thanks JK.... didn't know that. I only know that many anglers that fish for them are as dedicated as LM anglers.

Typically the big ones are called slabs, as in big slab of meat
