Papabear, I have been diabetic for years. Type 2 does change your eating. If you use almond flour get superfine, regular grind is a bit coarse. There is also coconut, tapioca and arrowroot flours. A combination of almond and coconut flours can work well for breading and baking. Good luck with the changes. You need to experiment to find what works and you like.

You can try baking the fish in the oven with out any flour or breadcrumbs.
Good luck with trying this method of cooking your fish.

I also do a cedar plank salmon on the grill. I soak a cedar plank in water for about an hour before cooking. I cook it right over the burner on a high heat to make the plank smoke. Delicious.

Thanks, I will try the 'taste of home' recipe on my trip. I am headed for a week each to Banks Lake Roosevelt Lake and Lake Pend Oreille in two weeks. Hopefully we will be eating mostly trout, walleye, and possibly, catfish, perch and smallmouth. To answer your question,at home my main food source is salt water flatfish (sole and sand dabs) as well as occasional fresh water trout, perch or smallmouth.

We do Greek pitas and Mexican pitas. We marinate the fillets in Kevin's Seafood spice, then grill. We make a sauce with Greek yogurt, sour cream, Kevin's spice, onion powder, garlic powder. dill, lemon zest, lemon juice and dill.

For the Mexican pitas we use whatever taco spice we have and grill.
For the Mexican sauce we use Greek yogurt, sour cream, cilantro, onion powder, garlic powder, lime zest, lime juice and taco seasoning

Bapabear. Maybe try this. We boil bluegill fillets. Really good with a little cocktail sauce. Everyone that’s tried loved it. Hillbilly shrimp. I do the no-no and dip mine in melted butter. Haven’t tried boiling other fish fillets but sure it would be good. Give er a try Fish on my friends
