A lot of of folks in the northeast eat them on the half shell which means raw. Squeeze of lemon wedge is my topping but some prefer a cocktail sauce or drops of hot sauce. Italian eateries up here use them for linguini with white/red clam sauce.

Sounds great. We often do the same with manilas, even though the health department and rule book has warnings against eating raw seafood.
This subject makes me think how NASCAR great Richard Petty was asked what is his favorite track. He answered "the last one I won on". I am going to take a page from Richard. What's my favorite fish to catch? Any thing that bites! I used to tell my charter customers that fish are like cars. Salmon/ striped bass are like race cars. Real fast and lots of horse power. Sturgeon are like semi trucks. Slower but lots of strength, and torque. At that slower speed sturgeon will "spool" your reel easily, and you can't stop them.

I also strip them for frying and chop them to make Clam Fritters.
Sturgeon by far. Hard to catch especially without a boat and best tasting meat Iβve ever caught.
Dorado for both the fight and great eating and such a beautiful fish.
Striped Bass, fun and available.
