Myrna made some noodles a month or so ago, with the help of two of our granddaughters (ages 3 and 7) . The 3 year old insisted on rolling them out, so …. She was sooo proud.Here’s the recipe.
Combine 1 beaten egg,
2 T milk, and 1/2 t salt
Add 1 Cup flour or enough to make dough stiff
Roll out to approximately 1/8” thick on floured surface
(add flour to rolling surface as needed)
Let set for about 20 minutes.
Fold dough in half - then in half again, flouring between each layer.
Cut folded dough in strips of desired width.
(Myrna cuts hers 1/4” wide)
Unfold noodles and break to desired length.
Add leftover flour on rolling surface to pile of noodles. Add flour if needed to reduce stickiness.
Let noodles set while preparing broth.
Put pre-cooked chicken in broth and bring to a boil.
Stir as you slowly add noodles and flour to boiling broth.
Cook while stirring to desired tenderness.
Enjoy. Even better as leftovers! IMO
