I have never tasted what we called jack smelt around Monterey. I tried to clean them a few times, but they worms were so thick that they kept dragging the filets off the cleaning table and running away with them.

Have caught and bought Jack smelt. Tastes good if you roll them in flour and fry them. If they are small size then you can leave the bones on them and eat the whole thing crispy.

I have to agree with Flytier Triggerfish is best! Blacktip shark the worst. Tastes like a old wet diaper smells!

most sharks urinate thru there skin, that is why it smells like the old wet diaper. LOL. The Thresher, Mako, Greatwhite, and there is one more but i can't think of it right now, all have uranary tracks, and do not pee thru the skin, and r good to eat, and do not smell bad

We like Halibut. However, we also eat a lot more Striper than Halibut because we catch them all the time. They are fabulous, especially when fresh.

You are right Bucky. I have caught and eaten both Thresher and Mako and they are very good. Never caught or ate a great white, don't think I want to anymore.

There are several similar looking smelt. Are you sure you are talking Jack Smelt and not surf smelt, or hooligan? I am not disagreeing with you. Like I said in my previous post, I have never tasted Jack Smelt due to the excessive worm problem. And I mean excessive. Jack Smelt and carp are the only seafoods my mom told me not to bring home anymore. That includes snails lipids and other crazy items, so she was very open minded. The small smelt we catch in Puget sound are great fried or smoked. So are Hooligan.

In order to make a shark eatable, including dog fish, the fish needs to be blead immediately, then skinned and all dark meet removed. That is a lot of waist on at 2 or 3 foot fish. Once you are down to all white meat it needs to be put on ice. This must be done on the boat when first caught. That is a lot of work and waste for a small amount of fish from smaller sharks. The end result is a fine tasting fish, but the texture is weird as there is no grain or flakes.

Papa, Sorry you are right. The small smelt I see in frozen bags at the market and here in surf in upper northern Calif. Folks here net them and fry them. Not sure I really tasted the bigger Jack Smelt. Have caught one from the pier but don't recall it's taste. They fight pretty good though for it's size.
