I gotta hand that one to fresh smoked king salmon from Alaska. Second on my list is jumbo perch from Idaho. I made some blackened Chanel cat from the Snake River last season and it was worthy of the list as well.

Salt: dorado and varied Pacific rock fish second

Fresh: Yellow perch (I have never had walleye but heard they were about the same as perch only bigger) I also like crappie, smallmouth, blue gill, pike or almost any other fish. I still have not had eatable common carp, but I am open minded.

I’ve had plenty of walleye, caught by me and it’s really good, but I’ll take the perch over walleye any day. Those stripers saw catches are mighty tasty too.

Snook are excellent if you remove the skin, otherwise they taste like soap.

Most white fish. Don't like red Snapper. Has a peculiar taste to me.

Hey Catfish, I have a friend who on a whim moved to Idaho. He bought a Motel/fishing resort on a lake. Can't think of the lake now. He shows me pictures of the perch. MONSTERS. How is that happening in Idaho?
