Halibut, but locally, my freshwater species are crappies, walleyes, perch, sunfish, and northern pike (I like them all)!

Walleyes and crappies are tough to beat!

I agree with both of Rockhound’s posts, but Grouper is not far behind from salt water.

Crappie, Walleye - fresh, and Grouper for Salt...

Salt: dorado and varied Pacific rock fish second

Fresh: Yellow perch (I have never had walleye but heard they were about the same as perch only bigger) I also like crappie, smallmouth, blue gill, pike or almost any other fish. I still have not had eatable common carp, but I am open minded.

I forgot to mention yellowfin tuna. It can not be beaten if seared/blackened on the outside and very rare/raw on the inside. Otherwise if over cooked it is nearly uneatable.
