I was referring to the red but from what I’ve been reading they all sound good.

Try smearing some butter on them to hold the blackening spices on and use a really hot cast iron skillet. Needs to be done outside, though, there’s not a hood vent made that’ll keep up with the smoke!!!

I usually use olive oil. Light coat to make the spices stick. You're right about the smoke, I have a 10 inch round vent and it just keeps up.

Way to go Troy. That croaker and Red will make a great meal. Never ate a Sheepshead, never want to.
