Hatchery fish taste like what they eat. Feed them corn and they taste like corn.
I think that brown trout taste better than rainbow, their good fried or barbequed. My aunt would can them like tuna and make fish Patty's they were delicious.
Other than catfish and salmon I would have to say trout is the only fish I am partial to. I am not sure I have actually ever eaten anything other than the prior three kinds of fish I listed as my favorites.

First of all, I would make sure that the fresh water fish in your area are safe to eat (they're not safe where I live).
Also I'm told that farm raised/stocked fish, such as trout, do not taste the same (not as good) as wild/native fish.

Yeah, your probably right. Mine are from a restaurant or a trout farm. Not fair.
I went into the Sierras a couple years ago to look at a piece of property an old gold prospector was selling. No one around for a mile or so. We had to hike in. But the Feather River ran through it and I saw a hole about 30 feet wide and a hundred yards long that had probably never been fished that had rainbows galore, big ones too. But the crusty old miner carried a gun and wasn’t too keen on trespassing so I never returned but wondered about that property and if it ever got fished. Now those would have been some nice wild trout.
Mullet is fine if it is smoked
You know, since you and the old miner were at least acquainted from the outing to scout his property and you probably had the means to contact him, you could conceivably call him to ask permission to fish that stretch of river; with his permission, you wouldn't be trespassing, and you could offer to share your catch as a way of thanking him ! (One caveat; if you do get permission, remember that bag limits still apply, even on private property !)
You may even be able to get catch and release permission if he doesn't want the fish harvested.
I would beg on my hands and knees to get permission to fish such pristine water.

Good for you, and good luck ! If you're a fisherman, how could anyone pass up an opportunity to fish an area like you described ! It never hurts to ask; if I was given such a chance and passed it up, I could never again call myself a true fisherman, nor could I live with myself for missing such an opportunity !
