I don't find them hard to scale at all. The one in the picture is a baby. They get three times that size.

Yup , Spadefish . Texas Parks & Wildlife say they are some of the best eatin in the Gulf . We catch them in Port Aransas on the jetty's using peeled shrimp along with drum. Put up a good fight .
That must been a tougher one. Took 11 minutes to get an answer.😀

Looks like an angel sheephead. Rare florida strain cross.
Spadefish or Angelfish. Very boney, but tasty.
