This is a Coho (Silver) filet that I fixed for dinner.
It was exceptional if may say!
that was from my July Westport trip with my Son and his family.
We can't keep those in California. My FIL used to take em out of Lake Michigan and smoke em. Some mighty good eatin.

I just read an article about how important omega 3s and omega 6s are for us. Cook more of that. Looks tasty too.

Here is what I did:
I put a glop of mayo in a bowl because I wanted to try something new so I added some liquid smoke, mixed then using a pastry brush, coated the filet. Prior to this I just used mayo w/o Smoke. Then I sprinkled the top with Tony's original Creole Seasoning and black pepper. Oven preheated 350 degrees. Baked 30 minutes. Time varies with fish thickness.
Prep: sprayed dish with light coat of Pam. Be sure to dry filet with paper towel so when you paint on the mayo (with or without liquid smoke) that it will stick.
