Like several guys above, I have become partial to apple wood for the trout smoking. And I like a brown sugar brine. I use the same for salmon, on the rare occasions I get a chance to catch any.

Nice catch brother.. do you cold smoke the fish or hot smoke?? What kind of wood do you use??? Going to catch some Red and Black Drum tomorrow.. thinking about trying some on the smoker. Thanks
