Alder is my favorite for fish also. Came from my Alaska trips - best tasting smoked salmon is from Tustamena Smoke House - Fred West. Put me onto the alder and I have never retreated from it.

I'd heard, years ago; that any kind of a fruit-tree wood was worth at least TRYING. {I'd heard that, from a pair of sausage-producing brothers, over on the South Side, here in the Dirty City. They used to operate a "Meat-Concession" @ the West Side Market, over on W.25 St. ... Not sure if they're still "kicking" or not, but their "Meat Shop" was called: "Fritz's Country Meats" & ¡Man, could them boys make good sausage!
