We call them mud cat in nm but yes they are good eating

Official name is flathead catfish. Will get up to 70 pounds and is one of the finest eating fish you can get.

Heat up some oil. Cook that flathead in some cornmeal and hot oil. Prepare yourself for compliments.

What you got there is a channel catfish. Altogether different then the flathead. Look at the tail of each. That will tell the difference plus look at the head. The channel cat is edible but not even close to as good as the flathead.
