Honestly, no fresh water fish compares to salt water such as sea trout, snook, grouper, snapper of all kinds, etc.
I can't tolerate cat fish or bass, I can barely get perch and walleye down with lots of sauce.

Hey sinner...
I don't think you've ever had it done correctly...with all due respect. I've had all of the above of your favorites and in my opinion they can't compare. Sea trout is soft and mushy. No, thank you. Snapper, snook and grouper are fine, but in my "humble" opinion, no comparison. Just sayin'.

Last time wife & I went fishing, I filleted white bass, crappie, walleye and catfish. Wife cooked all couldn’t tell difference. All tasted good

I’m a landlocked Midwesterner, so gotta take what I get re saltwater fish. But plenty of freshwater choices:

Saltwater——Cobia
Freshwater—Walleye

Now do you mean speckled trout or gray. Fresh or frozen. Gray trout will be soft especially if they are frozen. Specks on a grill is another story.

You got a hit with that one - smoked or just grilled - either way!
