I like perch the best but I havent tried walleye because we dont have very many where I live, so perch for now!

Well I would say sea mullet aka whiting sand spots flounder trout cat fish but give an extra point for best I can’t say they all are good

Catfish are my favorite, maybe primarily due to it's the most readily available. I also love walleye, which I ate for the first time on a trip to Minnesota's Lake Superior shore a few years ago. Then, black-tip shark is a fish that I find surprisingly tasty with the texture, IMO, of butterfly pork chops...although with a totally different flavor.
A note: I do not much care for fish with bones in it, but only filets. To a large degree, that eliminates many smaller fishes.
The one’s I like from Fresh water is bass from Canada, salt water is northern puffers.

I like salmon but I really like it smoked. Then I add cream cheese cayanne Pepper and mix it really good to spread on crackers
Sockeye (red). Is like Beef. Its as dark Red as beef. If blindfolded and cooked right might not know the difference when fresh BBQ
Fall Chinook is most common to smoke. In Alaska they call it Candy

Never had sockeye, I fish Ontario every fall for the kings and chinook though, I’m fortunate enough to have a hunting partner who has a camper and boat on the lake. I don’t pass on many fish dinners and seems if I get the offer I’ll have to try the sockeye.
