My late brother Allen, paraplegic, fished Crooked Creek, Buffalo River, Bull Shoals Lake, and the White River, would filet his bass, cut out the dark streak in the middle, and marinate it in a water and lime or lemon juice mixture for a few hours. Then cook them anyway you like, broil, baked, fried, sauteed, or roasted on a spit. It took out that dirty taste and everyone really enjoyed it.
