Can anyone recommend a smoker?

I have an Oklahoma Joe. I like it, but it's a lot of work. My brother has the Weber one that looks like R2D2. He puts a bag of charcoal in with a bunch of pork butts and goes to bed. When he wakes up in the morning, he adds a bit of charcoal and bastes a bit. The butts come out awesome. His son in law has an ugly drum smoker that does butts in half the time of either of ours. It all comes down to what your budget is, and how much work you do or don't want to do to get to delicious food.

I have a smoke hollow propane smoker works good I have used it for years you just have to keep the wind in mind when using it. I smoke a lot of salmon and venison! I always Like to stay in the 180-190 degree range while Smoking
there’s plenty of room on the dial to beef up the heat It can go to 350-400 degrees if your trying to finish off your stuff faster

Listen carefully...if all you want to do is to slow smoke (fish; jerky; etc.) buy the Little Chief or the Big Chief. They're awesome and VERY reasonable. And they do an awesome job. Even James Beard uses them. They only reach a high temperature of 165 degrees which is great for pork and chicken. You could always finish off in oven or charcoal grill if you wish. Three pans of wood shavings is plenty for anything you want to smoke. Two is even better. I couldn't exist without mine. Seriously.

How dependable are pellet smokers? A number of Amazon reports gripe about fan failure.

Ever owned a Triumph or Fiat? I’ve had my green mountain go down in the middle of 20 turkeys being cooked for several clients thanksgiving dinners. Flat sucks. But when they’re working-nothing is easier. I’ve learned to have a backup plan/spare parts/extra unit ready to go just in case the unavoidable does happens. My troubles so far have not been associated with any of the fans-usually an igniter fails or a cotter pin sheers way down inside the auger assembly.
So far, there seems to be little difference save for the quality of the components that go into the average priced grill and the higher end grill. They use the same technology and once you’ve been elbow deep in one, it’s not so different from one to the other.
Mechanical things break. Are they unreliable? I wouldn’t say that about a unit that isn’t being used to pump out 20 turkeys on a regular basis, but it does help to know the insides of the grill just in case you have to replace something.
Pellet grills are a clean and easy way to get some great tasting grub, and remember you get what you pay for.

If you don't smoke a lot of fish/meat, I'd recommend the Little Chief or Big Chief smoker. I've used it for years, but I don't use it frequently as I don't keep many of the fish we catch. Works great though when smoking trout, kokanee, salmon or steelhead. It'll also smoking a variety of meats, but I don't use it for that.
