Lemon Pancakes

I just found and made this new recipe with a few changes, Anybody interested in the recipe? My wife who would rather have Waffles even liked it and had 2nds!

LEMON PANCAKES
These lemon pancakes are the best pancakes that you will EVER eat! They are soft, delicious, and have the slightest hint of lemon flavor that will go perfect with just about any topping that you put on them.
1x2x3x
▢2 cups All-Purpose Flour (scoop and level to measure)
▢¼ cup Granulated Sugar
▢4 teaspoons Baking Powder
▢1/2 teaspoon Salt
▢1 3/4 cups Milk
▢1/4 cup Fresh Lemon Juice
▢1 large Egg
▢1/2 cup Oil (canola or vegetable)
▢1 teaspoon Vanilla Extract (or lemon extract)
▢1-2 Tablespoon Lemon Zest (more if you desire) (I used zest from two lemons and chopped into small pieces.
Rev: I made: 1 cup chopped Walnuts, 1 Cup Blue berries, instead of milk I used 2 Cups Buttermilk I like more to make thinner, Olive Oil.
Instructions


In a mixing bowl whisk together flour, granulated sugar, baking powder, and salt. Set aside.In another mixing bowl, whisk together milk, lemon juice, egg, oil, and vanilla until incorporated. Stir in the lemon zest.
Blend dry ingredients and stir the wet ingredients into the dry ingredients. Whisk just until combined. (batter will be slightly lumpy)
Preheat a non-stick skillet or griddle on medium-high heat. Spray with non-stick cooking spray or coat with butter.
Pour ¼ cup batter onto the buttered griddle or skillet and cook until bubbles begin to appear on the surface. Carefully flip and cook the opposite side until golden brown. Adjust and lower the heat if pancakes begin to burn.
Serve warm, dusted with powdered sugar, fresh whipped cream, and fresh blueberries!

Thx Kerry. The wife, grandkids, and great grandkids don’t eat my Sourjacks so maybe she will try this. I do add both lemon and orange zest in my SOURJACKS. We don’t really get fresh blueberries down here. I sure miss living in Coeur D’Alene and picking fresh huckleberries and adding to my SOURJACKS.

Try Frozen Blue Berries.

That is what we use. Order frozen Maine Blueberries which are smaller and more flavorful (sorry - used to love the northwest blueberries until I worked in Maine).

My favorite is high mountain Huckleberries from the Cascades, but don't have the get up and go to drive and hike there. Have "Wild Blueberries" in the freezer from Costco.

Yup we went up to the top of the Middle Fork of the Coeur D’Alene and were looking down into Montana. Got our Huckleberry rakes and 5 gallon buckets and went to work. Always had bears in the area. Last time we were in Coeur D’Alene/Sandpoint the Huckleberries were selling for &50 a gallon ziplock bag. About 1 pie worth. Needless to say only grabbed a qt. ($16.00) for some huckleberry SOURJACKS.

You all, let me know how you like them please. I think my changes I made, make it even better. I took the few left overs and after cooling, put in gallon bag in freezer so when I am pressed for time, nuke one for quick breakfast.
