You are right it doseand I'm not a liver guy.
I some times soak the breast in milk and honey for a day then rinse the breast soak them with soy sauce for a day cut them in strips wrap them Bacon
And put BBQ but don't over cook the Bacon.
This takes out the liver tast !!
Andy

Seems like a lot of work and effort to make a bird taste like something it’s not. If you did all of that to a chicken it would taste the same.

Andy:

I was up in at our ranch in Gustine this past weekend. Saturday was 33 degrees and I got two lesser scaup, two Greenwing teal, 2 wigeon, 1 ringed-neck and 1 snow goose.

Sunday morning was 27 degrees - water in the pipes at our house on the ranch froze, so no running water! Hunting was good but quick - 7 GW teal. Done in about 15 minutes. thick frost on the levee and a thin shell of ice at the edge of the ponds. Good think I put a neoprene vest on my lab! (I needed one, too!)

Looks like your hunt was spectacular, too!

Two goose breast (skinless) cooking ideas:

Marinate in a seasoned brine, and slice into thin strips for jerky.

I also will soak in buttermilk, and then split the breasts and stuff them with a mix of spiced breadcrumbs, chopped onions and apples, cinnamon and bake with some orange juice in the roasting pan.
