Beef and noodles

Makin beef and noodles tomorrow . Deriniyely one of my top 3 favorite foods in the world

Starting out with a couple really nice ribeyes
Sear pretty good in iron skillet
Put the steaks in the crock pot with a quart of beef broth , a couple handfuls of diced portables mushrooms , a small diced onion , salt and pepper to taste and a pinch of thyme
Cook on high all day.
When tender, break up the steaks and add Kluski egg noodles. As noodles cook , keep an eye on liquid level. Add water as necessary.
Serve up with mashed potato’s and peas.

Definitely a midwest thing - noodles and taters. Haven't had that in a long long time. My Pa.Dutch ma used to make stuff like that a lot, and I grew up on it. Careful Ben or you may end up like me.

Skipt the noodles potatoes and peas, brake up a head of cauliflower and throw it in. Your will have a Keto dish. You can do just about anything with cauliflower that you can with a potato but French fries.

I've had French fried cauliflower and it ain't bad. Used to feed it to us in the Navy. But then, I love the stuff any way it's prepared.

Sounds pretty darn good Ben, am also curious what the other two favorites are.

Myrna makes the best
(thick) homemade noodles and chicken over mashed potatoes in the Midwest (at least). Mmmm good!!

Can I have her recipe? My ma made her own and they were so much better than anything you can buy in a plastic bag. She never had a recipe, just threw some flour on the bread board, an egg or two and started kneading and rolling and cutting and drying. Then cooking. I'm familiar with the process, just not the proper amount of each ingredient. I make my own spaetzle, that's really easy. (my wife is not a fan so I don't make it often).

Myrna made some noodles a month or so ago, with the help of two of our granddaughters (ages 3 and 7) . The 3 year old insisted on rolling them out, so …. She was sooo proud.Here’s the recipe.

Combine 1 beaten egg,
2 T milk, and 1/2 t salt
Add 1 Cup flour or enough to make dough stiff
Roll out to approximately 1/8” thick on floured surface
(add flour to rolling surface as needed)
Let set for about 20 minutes.
Fold dough in half - then in half again, flouring between each layer.
Cut folded dough in strips of desired width.
(Myrna cuts hers 1/4” wide)
Unfold noodles and break to desired length.
Add leftover flour on rolling surface to pile of noodles. Add flour if needed to reduce stickiness.
Let noodles set while preparing broth.
Put pre-cooked chicken in broth and bring to a boil.
Stir as you slowly add noodles and flour to boiling broth.
Cook while stirring to desired tenderness.
Enjoy. Even better as leftovers! IMO

I use deer necks instead of beef.

Down right tasty when the deer neck is slow cooked in a cast iron dutch oven or crock pot. The neck comes out unbelievably tender (fork only/no knife needed) and the broth makes excellent gravy.

I think it is time for breakfast. And we have leftover crockpot beef and mashed potatoes from last night. Guess I'm skipping the cereal today!
