Usually clean trout, bass, and panfish. Previously have just been using a chefs knife for the last three years and that doesn’t cut it (pun intended) anymore, so let me know what you guys use and like!!

I picked up a bubba blade 7 inch flex
Liked it so much I bought the set with interchangeable blades.
With this , I can literally clean a mess of bluegill in the morning and break down a deer in the afternoon.

For those species I prefer a 7” Rapala fillet knife. When I retired my kids bought me a high end knife “blades of Alaska”. It sure works well on stripers and salmon but for those you intend it’s purposes I’d go with the much less expensive Rapala. Easy to sharpen, hold a good edge to easily clean 20 panfish without resharpening.

My best is an adjustable length Cutco knife model "Fisherman's Solution". Nice and short for the perch and lengthen it out for filleting and skinning the big ones.
Wooden handle Dexter, carbon steel blade that can be easily sharpened with a stone.
Electric for bass and panfish (also saltwater large 1/8 inch + scales)
Electric for any fish with large or tight scales such as sunfish and various kelp and rock fish. I also go electric on cats. For trout, salmon and flat fish, I use the white handled Dexter's. They are the main knives used by nearly all commercial fish processors. When worn out by a diamond blade Dexter steel, I just replace them. No personal emotional attachment. The knives are hard enough to take a good blade and soft enough to re sharpen with a few soft passes of the steel. It is the choice of the pros.

I have a bubba rechargeable with four different blades up to 12 " and it does a great job.
Rapala heavy duty electric filet knife. This is the best electric filet knife I have ever owned, and I have cleaned a lot of fish. Has two lengths of blades for small pan fish or larger species. Batteries last forever it seems and comes with 2 plus a charger. Don't work for the company but give them a look. Bass Pro carries them.
Wusthof Classic ikon 7 inch filet knife
Picked up a Cordless Lithium Ion Rechargable Bubba Blade With 4 sets of different length blades.... They are a little pricey,Picked mine up from a walmart sale. So far its hands down the best fillet knife Ive ever owned....And I am 59 and have owned many!!! Hopes this helps
I’ve had a wood handled Rapala for fourth years and love it.
