Sole and other flat fish

Ha-ha... OK; I'll trust your judgement, on the "better recipe" recommendation... I'll shop around a bit... We've got a place on the near-east-side of Cleveland, called "Asia Plaza", in "Chinatown" (what has been historically Chinatown, but...) I'm guessing that I'd be capable of finding any kind of specialty ingredients over there... I need to speak with the younger employees, when I go in there, 'cause most labels on most products are printed with only Chinese writing... Y; while many of the elders DO speak plenty fine enough English; some tend to be "a bit 'stand-offish' "; it seems.

I guess I should have said that I don't read OR write Chinese & only know about enough spoken words to probably get myself in trouble!

Yeah, I'm "with ya" on the squid... If I had all my TEETH back; ... I'm pretty sure that there's a few recipes that are at least EDIBLE; but, with no teeth at all; I can't see me using a squid for anything but bait, anymore.

Good job bapabear, I probably would have thrown them back not knowing the difference. Is this local fishing for you?

The one you hold in your left hand might be a petrale sole. This is the best eating of all soles including the grey sole. We usually had to wait until July to catch them in California as they preferred warm water.

The ramp is about ten minutes away. I drove about 30 minutes to where I caught them. But sole can be found all over the San Juan Islands area.

It's hard to tell from the photo. The mouth looks small in the photo, but that being said, there are several petrale sole in the pile, so I may have picked one up. Thanks for the input.
