Then in very hot skillet M/H seared each side for 1 minute.
Sometimes I do it that way, sometimes I sear it first. Depends on whether is use the grill pan or the outdoor grill.

WOW ! I cooked a standing rib roast. It weighed 4.92 (5) pounds. That's what we had for our Valentines dinner.
I cooked asparagus and little whole tricolored potatoes.
It all turned out great.
Your 2 steaks weighed almost as much as our whole roast.

My wife and I will celebrate 43 years this November 26.
One Valentine's day, about 30 years ago, I neglected to make reservations for a dinner that evening. I was really up against it trying to come up with something.
With a quick adjustment, I made it seem like it was my plan all along to shop for, plan, prepare, cook a very special Valentine's Dinner for her. I hit the supermarket on the way home from work. Turns out, we had a wonderful evening, and the meal was a huge hit.
Surf and Turf, with all the fixin's and a sweet dessert.
It was, in fact, such a hit that we made it a tradition, and I have done it every year since.
But, that first year, I was completely covering up for a lack of thinking and planning ahead.
Sometimes Plan B works out very well....

Thanks bad. I just received a new round Belgium Waffle maker and have been having a kick making the Waffles and trying different recipes. It sure works slick.
