I bought the pickled herring at Costco, yummy. I had to stop eating it because it caused gout in my foot from eating so much of it so said my doctor.

Yep, when I get a craving for pickled fish I go get a jar out of the fridge. I've never done it myself. I buy it at the market.
Here's the pickling liquid I use to make pickled carrots/jalepeños. I'm sure it would work and taste great with fish, I've just never done it.
5 cloves garlic smashed
1 1/2 cups white vinegar
1 1/2 cups water
1 tbsp vegetable oil
6 bay leaves whole
10 black peppercorns
2 tsp dried Mexican oregano
1 tsp salt
Bring it to a boil and let it cool, pack jars with fish and onions (?), fill jars and seal, refrigerate for about a week. Enjoy.

I still see the jar at Costco when we go there and all I can do is look at it and drool.

If you go on line and type in pickled fish "Shotgun Red" it is a great recipe. I have tried the same recipe on
shrimp which he has on there also and it is great. I enjoy watching the guy and I have several of his recipes.

I used to get pi kled herring at a bar after work on Fridays back in the day. They had a happy hour and you could eat all you want on saltiness crackers as long as you were buying beer.
Everyone seems to have forgotten the most important part, namely catch the fish first.

I'm more partial to "Creamed Herring" in a jar with onions in it... I just buy 'em at the supermarket every once in a while. My Ma got me started on that, over 55 years ago...
We have a big jar of the "regular" and a small jar of the sour cream.
Just the basic canned fish instructions in a pressure canner (jarrer?) I add a whole jalapeno pepper and some onion down the middle, salt, pepper. I have done mullet, red snapper, red fish, drum fish and cat fishes.
