That is really awesome Mike. Makes for much better BEEF for sure. I have heard about Elk aged for well over 20 days just above freezing temps. Remove any mold etc but then its so tender.
After skinning animals I like to rub them down a few times with vinegar solution to kill all the bacteria. It works well. Its a way my buddy did deer since being a kid a real long time ago.

Never cared for the flavor of beef that was aged for very long.
Don't care for the flavor of moldy cheese either.
I like Blue Cheese and all sorts of other cheeses but I don't like Mold myself. I have just heard of it. None of the animals I have ever butchered started to mold it is just what I was told about. Mold is gross.

I've ate elk cut up the next day even old bulls, there awesome a smell good. I've ate aged elk that just stink yes it's tender but am smells rotton. There's no fat in elk to let marble so why let it hang? Beef fat marbles after a week in a cooler then it's good.lol.

Black Angus I assume? Never had the freezer space to contain an entire animal. Curious to know how long that meat takes to consume. Two white tails last me and the wife a full year.

I’ve tried aging deer here in pa. but the weather usually doesn’t cooperate. I’ve heard they get much tender and tasty from others but haven’t been able to experience it on my own. No complaints though, they taste pretty nice to me just as they are
