Caribou makes great salami and breakfast sausage. Pretty gamey tasting by itself but edible.

Glad you reminded me; one of the local markets had buffalo (steaks and burgers) on special one time, and I picked up a nice little Delmonico for dinner ! I'd have to say that it was a toss-up as to whether the moose or the buffalo was better; they were both pretty tender and tasty !
