I can not seem to get a good sharp edge on any of my filet knives, much less on my kitchen knives.
Can anyone recommend a knife sharpener that really works?

Hotrod: Have you ever had a super sharp edge of your filet knives or kitchen knives? The reason I ask is do you know your knives will hold a super sharp edge? Some knives are made of less than highest quality medals and will never take as sharp an edge. That would be my first thought, then if they do contain high quality metal, then you would have to question the methods and tools you used to attempt to sharpen them. Just Sayin...RJS

I have rapala fillet knives and use either a regular sharpening steel or a diamond coated steel and they work great.

How to sharpen a filet knife or any other knife. First start with good quality steel made for sharpening knives. Than take the knife, hold the blade at 22 degree angle against the steel. Slide the blade down the full length of the steel with the blade going away from you. Do this 7times than 6, 5,4 ,3 ,2 and 1 all on the same side. Than reverse to the other side same angle. Now you will run the blade toward you. 7 times 6,5,4,3,2and 1. Do this after everytime you use the knife and never worry about a dull knife again

I have used the Edgemaker pro for over 30 years. You can contact them at edgemaker.com or 1-800-531-3343. They are an Ohio based company and the sharpeners are lifetime warranted. It is very easy to use and cost around $16.
Good luck and sharp knives.

I have a Work Sharp belt type sharpener from Cabela's. Really easy to use and does a decent job. You can put a really sharp edge on just about anything, then finish it with a ceramic rod. You can shave with it or lance a boil. RJS is correct though. Will it hold an edge? You need good steel for that.

That's why those Rapala filet knives have a sharpener in the sheath. You can sharpen it every time you draw it out. Can hardly beat em for the price.

Having said all that, what kinda knife are tryin to sharpen? What brand? Some filet knives, like Buck let's say, are notorious for having ridiculously hard steel - very hard to sharpen, but will hold an edge a long long time once you get it on there. Unless you know what you're doin, best to take one of those to a pro. My opinion.

Finally, Hoss, I dont want to hurt your feelings, but not everybody knows how to properly sharpen a knife with a stone. I've never used one of the sharpeners and do not know their efficiency. But to put a razor sharp edge on a quality steel knife takes so effort and patience. Just Sayin...RJS

I learned on WorkSharp, Spyderco Sharpmaker, and DMT Dia-Sharp Diamond stones. All are different, but work extremely well. A little earning curve. Good steel.

Stay safe, healthy, sanitized, and calm.

If someone hands me a knife to sharpen, that they have been experiencing what you describe; I usually see that the edge is WAY "gone"the by X they admit that they've tried > enough. Then I'll start out / a "mill-smooth" file, to at least get an edge there, that I can then begin to hone.

I use a Work Sharp also, it works pretty good and fast. Has several different grit count belts, so you can put a fast edge on it then finish To a nice sharp edge. I have no problem Filleting any fish that I’ve used it on.
