I always get a kick out of how the dinner guests react to ‘skin & scales’ on. If they “Eea-eouw” up front, then don’t recover or repent from that...they don’t get invited back. It tends to cull out the sissies.😎

PB, Might sound like a dumb question. But you didn't say to take them out of the sauce pan and put them on the grill or put the sauce pan on the grill. Sounds tasty and I got two reds to cook. Don't want to mess it up. Thanks, Gordon

Hey Hunt that sounds great...the only short cut by short cut I mean store bought mix is Cajun Land Seasoned Fish Fry...use it on everything. Since it's very hard to find in FL we make our own. Start with ground organic popcorn & add spices to that. Wife stays away from gluten...probably won't hurt me to stay away from the stuff. Learned that lime is usually better than lemon. I even add lime to my grilled steaks & grilled lamb. Learned that in southern Europe...Greece & Sicily

I also add lime to my coleslaw. Had it that way when I was on jobs down south someplace and can’t get away from it. I use either fresh key limes (can’t get them too often in Utah) or the bottled key lime juice. Have also used the pwd ‘Pure Lime’ and it works good also.

Gordon, the normal way is remove the fillets from the sauce, put them on the grill. Reserve the remaining sauce to spoon over or whatever.

Hunt: Zatterain’s is real close to CajunLand. Tony’s with some MarthaWhite’s Yellow Corn Meal mix is my go-to.

Huntm mentioned Rocky Mtn. Oysters at a place near Ft. Collins, I have been trying to remember what the name of that place is, myself. Was taken there by my sister, who lived in Greeley, in '75. Huge dance floor, humongous parking lot full, C&W band, that I was told had been playing there for like 20+ yrs. Basically a "Gilley's" in the middle of nowhere. Somebody on here, maybe a Colorado native, who can recall the name of the place, could help me with something I have been trying to remember for 45yrs. Great music, great "oysters", great memorable evening... just can't recall THE NAME, or which direction outside town ???? Help me if you can...thanks.

It seems like it was east from Ft Coolins. If I remember it was a one word place something like Redemption or a catchy name like like - but then the mind is not what it used to be. I just remember the jail we spent the night in for beating on some Cadets for trying to horn in on our lady friends. Cowboys kicking some Cadet rump. A few chairs and tables that we paid for and all was good - we left the jail and the Cadets were still sleeping it off. Oh - The things that happened in the younger years and still alive to tell about it. WOW WE WALTER!

Not a dumb question Gordon, maybe dumb on my instructions not to say remove Filets from the sauce pan and place directly on grill. JustRight is also right, thanks for clearing that up.
