I use hotdogs covered with garlic powder and hot pepper powder. They seem to like hot
Get some chicken livers; cut into two inch chunks, put in a jar with lid and leave in the sun for a week. (Lid loose so it doesn't explode, which would make an unholy mess) Great bait; lots of odor attractant to pull in the big ones. And after that you will be glad to go back to stink baits. They'll smell sweet.

Elastic thread helps to keep livers or whatever on your hook. We use it pretty often fishing for catfish and sturgeon.
Last time I fished for sturgeon, we used whole 18" shad for bait. Didn't need elastic thread.

Absolute best bait for catfish (large) are small bluegills their favorite prey item. Second are night crawlers
a big helping on your hook at least two.

worms, minnows (alive or dead), shrimp and my favorite is chunks of fresh caught bluegill!!

well, If I had read your post first I wouldn't have posted mine..you spot on dude
Whole squid soaked in anise oil works great for sturgeon too.
I’ve found that the best bait for larger Channel Cats is blue gills or filets of blue gills. I found when cleaning these catfish, they always have blue gills in their stomach’s. So I started using them for bait with great success.
