I only fish salt water,but I found cutting the fish behind the gills,and dropping it in a 5gal bucket filled with water, let bleed out for about 5min. Then place the fish on ice. It will take the strong fish taste away.

I have GPS fish finder in one.on a 226 sea fox center console. We fish over old trolley cars,and wrecks. Can we see fish on them? Fluke lay on top of trolley cars. I never see them.
