Believe they're similar to shark fillets, large fillets and few bones. They're also called blue channel cat, gafftop sail cat around here.

If in south west panhandle, careful. Lots, and I emphasize many including in the Fla/Ala line, of southern Bama bass just placed on the mercury contaminated eating restriction.

Just a side note. My grandmother was decapitated as she worked in the fields of Baldwin County 1941 by a Navy bi-plane with trainee & pilot who were buzzing local farm workers. Back in 2000, 53' trailer was loaded with 5# boxes frozen shrimp to deliver to Ga.. Loaded in Bayou la Batre, Al., which was a shrimping-dominant economic area with docks lined by the shrimp boats. The shrimp came from Vietnam, relabeled at a 'processing' facility there @the bayou, then shipped with Alabama, USA on the label. This happened around 5years after the 'eat local' campaign got started by the local shrimpers.
